Our Recipes

Here are a few recipes with our Italian pasta sauce. They are fairly quick and extremely yummy. Each recipe serves about 4, except the lasagna which serves about 6. We hope you and your family enjoy them as much as ours.

Lasagna

Ingredients:

  1. 1 jar Mama Valerio's Meat Sauce (if you prefer, use more or less)
  2. 1 box "Oven Ready" or "No Boiling Required" lasagna noodles (may use traditional noodles)
  3. 2 lbs ricotta cheese
  4. 2 cups mozzarella cheese (if you prefer, use more or less), sliced or shredded will work
  5. ¼ cup parmesan cheese, grated
  6. 2 eggs

Method:

  1. Preheat oven to 350° F.
  2. Drain ricotta cheese with a strainer.
  3. Mix the ricotta cheese and eggs until well-blended. Set aside.
  4. Spread enough of the sauce on the bottom of a 13 × 9 × 2 glass pan to coat it entirely (Don't drown it-we need to reserve sauce for future layers).
  5. The noodles are ready to go straight from the box; so, arrange 4 pasta pieces lengthwise over sauce, overlapping edges.
  6. Spread enough of the cheese mixture to cover the top of the pasta.
  7. Sprinkle enough of the mozzarella over the top of cheese mixture layer to cover it completely.
  8. Repeat layers ending with pasta.
  9. Add remaining layer ingredients and top with parmesan cheese.
  10. Cover with foil and bake for about 45 minutes or until you see a significant amount of bubbling.
  11. Remove foil and bake for 15 minutes or until lightly browned.
  12. Let stand for about 10 minutes before cutting.

Chicken Parmesan

Ingredients:

  1. 1 jar Mama Valerio's Meat Sauce (if you prefer, use more or less
  2. breaded chicken breast patties, frozen will do
  3. 8 ounces mozzarella cheese, sliced or shredded will do
  4. ½ cup parmesan cheese, grated or sliced
  5. ¼ cup olive oil

Method:

  1. Preheat oven to 400° F.
  2. Heat olive oil in large frying pan on medium heat.
  3. When oil is hot, add defrosted chicken patties.
  4. Fry for 3-4 minutes on each side. Set aside on paper towels to absorb excess grease.
  5. In a 13 × 9 × 2 glass pan, spread enough sauce to thickly coat the bottom.
  6. Place chicken patties in pan.
  7. Pour remaining pasta sauce over patties.
  8. Cover each patty with the mozzarella cheese.
  9. Top with parmesan cheese.
  10. Bake uncovered for about 30 minutes or until the mozzarella begins to brown.
  11. Allow to cool for about 10 minutes.

Veal With Peppers

Ingredients:

  1. 1 jar Mama Valerio's Meat Sauce (if you prefer, use more or less)
  2. 1 lb veal cutlets (may substitute with beef), cut into 2 inch pieces
  3. 6 green or red peppers cut into 2 inch pieces, or 3 of each
  4. ¼ cup olive oil
  5. ¼ cup cooking wine
  6. ½ lb of any pasta you like
  7. ½ cup parmesan cheese

Method:

  1. Fry veal in olive oil on a medium heat for a few minutes or until lightly browned on each side.
  2. Add wine and peppers and let cook for about 10-15 minutes on medium heat, uncovered, stirring occasionally.
  3. Add pasta sauce and simmer while uncovered, stirring occasionally for about 45 minutes to an hour. You want the sauce to thicken some.
  4. Cook pasta according to package directions.
  5. Serve veal with peppers over pasta.
  6. Sprinkle with parmesan cheese.

Braciole

Ingredients:

  1. 1 jar Mama Valerio's Meat Sauce (if you prefer, use more or less)
  2. 1 lb flank steak
  3. ⅓ cup grated parmesan cheese
  4. 1 tablespoon parsley, sliced
  5. 2-3 tablespoons olive oil
  6. ½ box of any pasta you like
  7. romano chesse, enough for sprinkling

Method:

  1. Cut the steak into strips about 3 inches wide.
  2. Sprinkle parsley and parmesan cheese over strips.
  3. Roll up each strip and tie with string or secure with toothpick.
  4. Fry in olive oil on medium heat till lightly browned, a few minutes.
  5. Pour pasta sauce in pan and cook on low for about 45 minutes to an hour.
  6. Cook pasta according to package directions
  7. Serve braciole over pasta
  8. Sprinkle with romano cheese

  9. WARNING: A toothpick is the object most often chocked on by Americans. Watch out for toothpicks AND strings! Ingestion of foreign objects can pose life threatening complications. I beg you to exercise caution.

Pizza Bread

Ingredients:

  1. 1 jar Mama Valerio's Meat Sauce (if you prefer, use more or less)
  2. 12 inch french bread loaf, cut lengthwise
  3. 1½ cup shredded mozzarella cheese (if you prefer, use more or less)
  4. 2 teaspoons oregano

Method:

  1. Spread about ½ cup of sauce on each 12 inch half of bread.
  2. Sprinkle about ¾ cup of mozzarella over each 12 inch half of bread (if you prefer, use more or less).
  3. Sprinkle 1 teaspoon of oregano over each half.
  4. Bake at 350° F for about 15-20 minutes until bubbling and lightly browned.

Prosciutto Panini

Ingredients:

  1. 1 jar Mama Valerio's Meat Sauce, will have extra
  2. 8 ounces thinly sliced prosciutto
  3. 8 slices thinly sliced mozzarella cheese
  4. 8 slices of bread, ciabatta works well
  5. about ½ cup olive oil

Method:

  1. Brush olive oil on one side of each slice of bread. This will be the side that is exposed to the grill.
  2. For each sandwich, place one slice of cheese on the inside of each slice of bread, the side we did not oil.
  3. On top of the cheese, place a slice of prosciutto (for each slice of bread).
  4. Place 3-4 tablespoons of Mama Valerio's meat in each sandwich.
  5. Put the slices together to create 4 sandwiches.
  6. If using panini maker, follow manufacturer's instructions. If using an indoor grill or frying pan, cook on medium heat for 3-4 minutes on each side. Bread should be golden brown when done.

Portabello Panini

Ingredients:

  1. 1 jar Mama Valerio's Meat Sauce, will have extra
  2. 4 portobello mushrooms
  3. 8 slices provolone cheese
  4. 8 slices of bread, ciabatta works well
  5. about ½ cup olive oil

Method:

  1. Remove stems and clean mushroom caps well. Grill caps for about 3-5 minutes on each side on medium heat, covered. You will know they are done when they are slightly charred and softened, but still have a firm, fresh feel. Set aside.
  2. Brush one side of each slice of bread with olive oil. This will be the side exposed to the grill for frying.
  3. Place one slice of cheese on the inside of each slice of bread (not the oiled side).
  4. Place 3-4 tablespoons of Mama Valerio's meat sauce on each slice of bread over the cheese.
  5. Place 1 mushroom cap on 4 slices of bread over the cheese.
  6. Put the slices together to create 4 sandwiches.
  7. If using panini maker, follow manufacturer's instructions. If using an indoor grill or frying pan, cook on medium heat for 3-4 minutes on each side. Bread should be golden brown when done.

Pizza

Ingredients:

  1. ½ jar Mama Valerio's Meat Sauce
  2. 1 lb store-bought pizza dough or use your own
  3. ½ lb mozzarella cheese
  4. ½ lb freshly grated parmesan, romano or asiago (all three together are delicious!)
  5. 2-3 teaspoons fresh oregano
  6. 1-3 Italian sausage links, fried until lightly browned, sliced or crumbled (optional)
  7. ¼ lb pepperoni, sliced (optional)
  8. 1 medium-size green or red bell pepper, seeded and thinly sliced (optional)
  9. ¼ lb mushrooms, thinly sliced (optional)
  10. ½ can anchovy fillets, drained (optional)
  11. 1 medium onion, thinly sliced (optional)
  12. flour, no more than ¼ cup
  13. olive oil

Method:

  1. Preheat oven to 400° F.
  2. Roll out dough evenly on a clean, lightly floured, flat surface. You should end up with a 14- to 15-inch circle.
  3. Place the dough on the pan
  4. Spread the Mama Valerio's Meat Sauce evenly over the dough.
  5. Sprinkle the oregano evenly over the sauce
  6. Scatter whatever optional ingredients you wish over the sauce.
  7. Top with the mozzarella, parmesan, and/or romano.
  8. Drizzle a little olive oil evenly over the entire pizza.
  9. Put the pizza on the middle rack of the oven and let it cook for about 20 minutes or until crust is golden and cheese is bubbling.
  10. Allow to cool for 10 minutes or so.
